Blueberry buttermilk pie

Ingredients

  • 1 9 inch pie crust (graham cracker pre-made crust works well)
  • 1 cup fresh blueberries
  • 3 eggs
  • 1 cup buttermilk
  • 4 tablespoons melted butter
  • Juice from 1 lemon
  • 1 teaspoon vanilla extract
  • 1 ½ cup sugar
  • ½ cup all-purpose flour
  • Dash of salt

Process

  1. Preheat oven to 325 degrees.
  2. Place blueberries evenly in pie crust.
  3. In a large bowl, combine sugar, flour, and salt by whisking thoroughly
  4. In a separate large bowl, whisk together eggs, buttermilk, melted butter, lemon juice, and vanilla extract.
  5. Add the flour mixture to the egg mixture and whisk until smooth.  Pour into the pie crust.
  6. Bake for 1 hour or until golden brown.  It should still be somewhat soft in the center.
  7. Remove from the oven and cool on the counter top.  Once cooled enough, place into the refrigerator for at least 3 hours to set.

    • Great, recipe!! Just made it. Used a Diamond Pecan Pie Crust. Cooked perfectly. Not too sweet, it’s perfect!!
