Tomato Gravy

Ingredients

  • ¼ cup rendered duck fat
  • 3 tablespoons all-purpose flour
  • 2 cups water
  • 1 (6) ounce can tomato paste
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 teaspoon onion powder
  • 1 dash hot sauce

Process

  1. Heat duck fat in skillet over medium heat
  2. Slowly stir in flour and whisk to combined thoroughly
  3. Slowly whisk in water
  4. Add tomato paste and combine until incorporated
  5. Add seasoning
  6. Cook until thickened approximately 5 minutes

Chef’s Note:  Rendered bacon fat can be used instead of duck fat.  Serve over homemade biscuits.
